Sunday on the Grill

BBQ ChefOn Sunday Mike started practicing for the upcoming BBQ competition. He used family and friends as guinea pigs. He has a reputation for cooking well so it’s not like we had to hold a gun to anyone’s head or anything. Yes, he was wearing the hat. Around noon he started getting the grill ready for a marathon of meaty goodness.

He had meat prepped the night before with rubs and a marinade including pork shoulder, short ribs, and chicken. Mike insists on completely loading up the grill if he is going to go to the trouble of heating the whole thing up. I think that’s just the excuse he uses to barbecue an assload of meat all day long.

I barely got pictures because he kept yelling at me every time I came near the lid on the grill. “It’s at the PERFECT temperature!” I think he threatened me with his tongs once or twice.

img_0242By late that evening we were finally ready to dig in and see what all the smoke and obsession was about. We threw in grilled veggies and a tomato, cucumber, orange salad. I made a lemon cake with lemon drizzle for dessert.

It was AWESOME. Everyone seemed to like the ribs the best although Mike is back to the drawing board to perfect his “rub” because he thought they were a bit salty. The pork shoulder was amazing. Juicy, sweet and nearly beefy to the point of prime rib goodness. I loved the chicken. He’s been doing this awesome marinade with citrus and rosemary for a long time that does nearly naughty things to chicken. Although, Mike thought the chicken needed a little more heat, but that goes back to him obsessing over the rub again.

All in all, it was a kick ass test run. I think he’s really on to something!

    LOLMike loves to eat ribs cold, hot, or any time of day.

    Me? I think I’d like to start out with the oatmeal and work my way up.

    It’s funny because I know that by the end of the summer I am going to be sick of barbecue and Mike would freaking barbecue in a blizzard if he could.
