Summer… barbecue and grilling are the name of the game, am I right?
We typically do a lot of salads and fresh sliced fruit in the summer, but when that gets a little boring we throw some easy side dishes on the grill.
Corn on the cob – don’t shuck that corn!!! Throw the whole ear on your grill and let it do it’s own thing. When it is finished cooking you just peel down the husk and it becomes an instant handle!
Grilled asparagus – this one is always a winner around here. Dress your asparagus in fresh lemon or lime juice, olive oil, salt and pepper. Toss it on the grill until it’s tender. Platter it up. Lots of variations, you can wrap them in bacon and grill, or top them with Parmesan cheese once they are off onto your platter.
Red potatoes – love this one. Roll out a long sheet of foil, slice them in half, drop them on the foil. Dress them with olive oil, salt, pepper, and freshly chopped rosemary and garlic. Wrap your foil into a package, I usually double wrap mine. You can toss the package into the coals or just set it on your propane barbecue and let it cook while you are cooking up your main dish. This also works well with sliced sweet potatoes, but I omit the garlic and add chopped jalapeno instead.
I absolutely love these side dishes because they make entertaining so easy. I can prep any of these dishes, put them onto a tray and when Mike is ready he just grabs the tray and throws them on the grill.
